Pumpkin Spice Cake with Cream Cheese Frosting
(adapted from The Cake Doctor)
1 pkg plain spice cake mix
1 15oz can pumpkin
1/2 cup water
1/2 cup vegetable oil
3 large eggs
1 tsp ground cinnamon
1/2 tsp ground ginger
Mix ingredients, blend on low for 1 minute, medium for 3. I baked mine at 350 for 35 minutes in a bundt pan.
Cream Cheese Frosting
1 stick of butter, softened
1 block (8oz) cream cheese
3 3/4 cup powdered sugar
1 tsp vanilla
1 tbsp milk
Beat until fluffy the cream cheese and butter together, add vanilla. Incorporated the powdered sugar 1 cup at a time. Add milk to thin out to desired consistency.
